Dextrose, also known as grape sugar or glucose, is a natural sweetener often used as an alternative to regular sugar. It is slightly less sweet than granulated sugar but dissolves more quickly and easily in water. As a result, it crystallizes less readily, keeping the final product creamier. For this reason, dextrose is frequently used in (sorbet) ice cream to maintain a smooth texture. In addition, it lowers the melting point, making the ice cream easier to scoop. Dextrose also appears in some bread recipes, where it helps the dough rise when combined with yeast.
